This salad takes less than 5 minutes to make, only uses a few ingredients and most importantly tastes delicious! It's great as a starter or a light lunch, and beetroot is surposedly a superfood so it's reasonably good for you. I had something similar in
The Real Greek a few weeks ago, but there wasn't even nearly enough beetroot, so I decided to make my own exactly the way I like it:
Serves 1
Handful mixed salad leaves
25g feta cheese, crumbled
1/4 red onion, chopped
2 prepared beetroots, quartered
1/2 tsp dijon mustard
1 1/2 tsp balsamic vinegar
1 1/2 tsp olive oil
- Pile the leaves, onion, feta and beetroot on a plate. Mix the dijon mustard, balsamic and oil together and pour over the salad. Eat!
